Then at that exact moment, her mother was in immediate need of medical attention, but in that whole goddamn hospital there was not even a single doctor capable of doing so, for...reasons.

So Rick takes this opportunity to show off and get the goodwill of Erza.

After which it is simple, their story develops feelings a little as Erza wanted his help to cure her mother, which he was not stupid enough to cure in the first try, using that opportunity to meet with her.

Then knowing she works for him, Rick used her as a spy around him to inform him of every action.
